Ingredients:

1 Egg
½ cup Sugar
1/3 cup Kishmish
2 cups Peach slices
1 tsp Vanilla Essence
½ cup Butter, softened
1 cup finely ground Walnut
1 ready shortbread Pie crust
1/3 cup Apple jelly or Peach jam


Method:
In bowl, beat butter and sugar until light and fluffy; beat in egg and vanilla.
Stir in walnuts and raisins. Spread in pie crust.
Drain peach slices well between layers of paper towels; arrange on pie, slightly overlapping edges.
Bake at 350° for about one hour or until browned and set in center. Cool.
Melt jelly in small saucepan or microwave oven. Brush over peaches.


Tip: When whipping heavy cream always whip in a stainless steel bowl. Aluminum bowls will cause the cream to turn grayish in color and the cream will taste metallic.
