Clay guida even if the hair looks shitty
Title holders in every weight class like on the SvR games
South paw
More styles like karate ,greko roman wrestling
Better career mode
make the submissions a little easier
be able to make any fighter fight up and down 1 weight class
show the fighters walking into the octagon
unlockable tapout guys , dana ,joe rogan and royce gracie.

A think they should add a couple more fighting styles, but honestly those six are about as much as you see in UFC.
you should be able to pick if you are a lefty or a righty thought was a bit shocking
I likethe submission system it was realistic imo
Career mode was pretty stale, Im sure they can spruce it up in some ways.
Entraces would be cool like in the SVR games

Personally I loved the game inside and out so I would change much to it
