Rock & Austin stands out because you remeber all the promos and that was the first time I remeber they kicked out of each other finishers. And in WM 15 where they do commentary while they are fighting each other is classic and hillarious

Hogan v Slaughter leading up to WM VII was spectacular.
HBK v Bret Hart - the animosity between the two in real life just made that rivalry so much better than any other rivalry ever.
